No-Bake Breakfast Bars That Are Totally Worth Getting Out of Bed For
How do you usually start your day?
I’ll give a snapshot of the beginnings of mine:
- Patrick comes into my room at 4 AM
- I beg Patrick to lay down and go back to sleep
- Patrick begrudgingly agrees, and then kicks Joe for 90 minutes of seriously unsatisfying snooze-isn “sleep”
- Patrick wakes me up again at 5:30 AM and requests breakfast
- I stumble out of bed into a dark kitchen to make whatever I can find and handle without contact lens and/or coffee
- Patrick eats his breakfast facunder two minutes and asks me for seconds
- Repeat step 5
Long story short, I rarely have one of those spry, spring from the bed, ready to “take on the day” kind of mornings. I’m basically the definition of a zombie from the moment my eyes first open up…and until the 3rd sip of my 2nd cup of coffee.
In an effort to better my situation, I decided to craft something crazy delicious for our first meal of the day. I bought myself (and I guess the kids, though I haven’t shared too much yet) the new HONEY MAID® S’mores cereal. Fair warning: it’s basically the best thing you will ever taste in your whole life. If you want to go buy one box at Shop Rite (that’s where I got mine!), just do yourself a favor and buy three.
And thank me later.
You can check out a video of our shopping experience at the end of this post!
I mean, take a look at this picture.
We are talking crunchy bites of chocolate, sweet baby marshmallows and the honey-kissed taste of HONEY MAID® Graham Crackers.
Obviously you can go old school and eat S’mores cereal in a bowl, with milk. Or you can just dig right into the box for a fistful (and congratulate yourself on having one less dish to wash). In fact, I’ve done both of those things in the last 48 hours.
But before (or after) you do those things, try out my crazy delicious 4 ingredient, no-bake breakfast bars.
The base for these bars is S’mores cereal – 2 full cups of it! Then we added peanut butter, oats and honey (or maple syrup) and mixed it all together in the Kitchen Aid Stand Mixer for about one minute. At this point, I was basically done. I grabbed a Pyrex dish, mushed my future BBBs (best breakfast buddies) into it and popped the dish into our fridge for 30 minutes.
By the time I was done loading the dishwasher, taking a shower and attempting to make myself look borderline presentable for the day, it was time to EAT!
And it was heavenly.
We all wanted at least a bite…including Fiona. Though in fairness, I think she smells peanut butter any time a jar opens, even if it is a few houses away.
Oh! And if aren’t a peanut butter lover, you can absolutely swap in almond, sunflower or another nut/seed butter. Easy Peasy!
